Cafeteria Chain Seeks Sustainable Catering

A major cafeteria management chain [Bon Appetit Management] has rewritten its mission statement to emphasize sustainable agriculture, asking its chefs to use locally grown produce and meat free of hormones, antibiotics and genetically modified feed.
